    Quirkier than either of the other two, INeedCoffee includes coffee-related poetry, fiction, and cartoons, plus recipes (homemade Thai iced coffee, anyone?). And the most extensive selection of home-made coffee-roasting devices and methods we've found everywhere, using everything from popcorn poppers to heat guns.

    Terrific idea — a participatory website for foodies. Andrew Sachs runs this handsomely designed, user-friendly webspace to which you can contribute recipes, restaurant reviews, culinary and gustatory experiences, and other content.

  • Tako in the Kitchen
    Our favorite cooking show, this elaborate cartoon site from 8legged Entertainment presents Tako, the octopus chef, offering actually useful culinary tips while surviving a series of peculiar adventures involving killer shrimp and such.

  • The Wacky World of FLAN
    We particularly enjoy flan as a dessert accompanying our coffee, but we haven't looked at it quite the same way since visiting The Wacky World of FLAN. Who would have imagined this custard had so many other uses, and such a rich inner life?

  • l'Association Cuisine et Tradition
    Our good friends Madeleine and Erick Vedel run a cooking school in Arles, in the south of France (think Van Gogh, think sunflowers). It's called l'Association Cuisine et Tradition, specializing (mais oui!) in provençale-style cooking. You couldn't ask for better guides to that earthy, sensual complex of flavors.

    When it comes to hot stuff, we look to Fire Girl, Mary Going's fine home page for everything related to hot and spicy foodstuffs. Includes recipes, growing instructions, advice on worship, and a big links section.

  • Mark's Hot Links
    Mark's Hot Links, posted by one Mark Stevens (no, not "Mr. 10-1/2"), supplements it well; more recipes, more links, more tips, some science. The guy view vs. the gal perspective, you might say.

  • Buffalo Wing World Domination
    Since having been introduced to Buffalo-style chicken wings in the 1970s, we've needed — and we mean needed — regular infusions ever since. So we take Buffalo Wing World Domination — a diabolical scheme "to peacefully take over the world through the use of nanite-laced buffalo wings" — quite seriously.

    Born during World War II, Ye Executive Director has memories of . . . spam. (Or should he say, SPAM®?) The chopped-meat product in a can whose name became a synonym for the bane of the 'Net: junk email sent out in bulk. He avoids the latter as best he can, and never touches the former nowadays (except once a few years ago, in Las Vegas, when a very hip Japanese art student served spam sushi at an opening). Still, the stuff does have a niche in culinary history, as explicated at The Amazing SPAM Homepage.
